After just one bite, he looks up, and in the total silence of the newly opened restaurant, he pronounces his prophecy: “If you always make your panini like this you will make a fortune!”

For more than thirty years, Panino Giusto has represented a Milanese business that has 17 restaurants in the city of its birth, 5 restaurants in the rest of Italy, 5 in Japan and one recently in London.

Prosciutto Di Parma
Panino Giusto hand selects only the best Parma ham that is cured a minimum of 24 months, in the cellars of Tanara, in the Langhirano hills. Quality control is done by smell, using a needle made of animal bone, to pierce the ham. After inspection each ham is uniquely identified with Parma’s famous five point crown seared into the ham itself.
Panino Guisto's Mortadella by the Veroni Brothers is crafted with the best cuts of pork, which are first finely ground then mixed with small cubes of fat, whole pistachios, then seasoned. Not to be confused for simple Bologna, Mortadella has Protected Geographical Indication status.
The Italian version of smoked ham - its complex process results in its delicate taste. The pork leg is deboned, cleaned and then marinated for a day in Panino Giusto’s special brine mixture. After this, the leg is smoked with beech wood, where it matures culminating its delicate flavour.
Parmigiano-Reggiano has the second-highest level of the amino acid glutamate of any natural food. Glutamate is a key component to “umami”, also known as the fifth taste, the savory taste. The longer Parmesan ages, the more glutamate is formed. This is why Panino Giusto only uses no less than 24 month aged Parmigiano-Reggiano.
Alba White Truffle
The Cerutti Family from Montà d'Alba have been harvesting the highly prized Italian white truffles for four generations with the help of its intensely trained truffle dogs like Toby. The "trifola d'Alba" are the most highly esteemed of truffles and thus, also the most expensive.
Aceto Balsamico Di Modena
Traditional balsamic vinegar from Modena is an ancient specialty - its first mention was dated back to 1508 at the court of the Duke of Modena. There are two key factors to the production of Balsamico di Modena: cooked, ripened grapes and the location of the barrels during aging. These barrels are placed in specialized attics or “acetaie”.
Extra Virgin Olive Oil
Batch production by the Trampolini family since 1785, its secret blend of 3 types of olives; Moraiolo, Dolce Agogia and Leccino, has been passed down for over two hundred years. Only the family’s olive press is older dating back to the 1300s.
The Cabanon vineyard is one of the most renowned names among wine lovers in the Oltrepò Pavese region of Italy. Their vines reach maturity through sustainable methods and are certified organic, resulting in wines free of preservatives. The family’s passion of living off the land has been passed down from generation to generation. Fate has it that the family dog is also named “Panino”.

Quality and speed was the motto of Lord John Montagu, 4th Earl of Sandwich. Panino Giusto dedicates a Panino to him with delicious roast beef, slow-cooked at 52 degrees.
